Dry - Fino


Fino is dry: the new wine is only slightly fortified, and a fungus called Flor settles on the surface of the wine inside the butts of the Solera ( the Solers is the collection of butts of that wine). There is a system of taking jugs of wine to another layer of butts in the Solera. New wine gradually ascends this ladder as it ages
